Tomato Cream Sauce for Pasta

Ingredients

  • 2 T Olive Oil
  • 1 onion diced
  • 1 clove of garlic minced
  • 1 can 14.5 oz of diced tomatoes, undrained
  • 1 T chopped fresh basil
  • 1/4 t sugar
  • 1/4 t dried oregano
  • 1/4 t salt
  • 1/8 t black pepper
  • 1/2 cup milk or half and half
  • 1 T Butter
  • 1 T Parmesan Cheese

Preparation

Step 1

cook onion in olive oil until starting to soften, not brown. Add garlic and cook additional 3 min. Add tomatoes and spices. Cook on low for 10 minutes. I used an emersion blender to chop finer but not all the way. cook an additional 5 min. Add butter and milk. warm through and add cheese just until melted.

Note: original recipe called for heavy cream but I substituted milk and cheese. This was great over ravioli
