Ginger Lemon Tiramisu

Ingredients

  • 1/2 C ginger preserves
  • 1/2 C lemon juice
  • 1/4 C water
  • 2 packages of lady fingers
  • 1 container 8 oz marscapone cheese at room temp
  • 1 brick cream cheese room temp
  • 1/3 c sugar
  • 1 T grated lemon zest
  • 1 C heave cream
  • 1 C shopped srawberries

Preparation

Step 1

Line bottom of 8" springform pan with nonstick foil. Microwave giner preserves in glass bowl 1 min, whisk in lemon juice and water. Stand 3 strips of lady fingers around side of pan and place 14 lady fingers over bottom, flat side facing you, cutting to fill in. Set aside 1/4 cut ginger syrup; brush ladyfingers with about half of remaining syrup. In large bowl, beat marscapone, cream cheese and sugar until blended. Beat in reserved 1/4 cup syrup and lemon zest. In med bowl, beat heavy cream until stiff peaks form, fold in cheese mix. Spread 2 C cheese mix into pan over ladyfingers. Arrange remaining ladyginders on top, butting to fit. Brush with remaining ginger syrup. Evenly sprinkle strawberries on top; spread remaining cheese mix over strawberries. cover and refigerate overnight. Remove side of springform pan; slide off lined bottom onto serving plate.
