Ingredients
- 1- 16 oz box of Betty Crocker Pound Cake mix
- 1 cup pure pumpkin (Libbys) I use entire can
- 2 large eggs
- 1/3 cup of milk
- 1 tsp. pumpkin spice
- 1/2 teas. ground cinnamon
- 1 cup Walnuts
Preparation
Step 1
Preheat oven to 325 degrees. Grease a 9x5x2 1/2 inch loaf pan. Set aside. Combine all ingredients except nuts in a large bowl. Blend on low speed of an electric mixer until combined, then beat on medium speed for 3 minutes. Stir in Walnuts.
Pour into prepared pan, smoothing top. Bake in center of oven for 60-75 minutes, or until a skewer inserted in center comes ou clean. ( I put aluminum foil over the ends when they start to brown). Cool in pan 20 minutes, then transfer to a wire rack to cool completely. Makes 24 3/8 inch slices.
