Sweet & Spicy grilled veggies with chicken sausage

Ingredients

  • 3/4 c peach preserves
  • 1/4 c light soy sauce
  • 2 T ginger root
  • 2 cloves garlic
  • 1 t asian hot chilie sauce (sriracha)
  • 1 medium eggplan 1/2" slices
  • 2 large zucchini cut diagonally into 1/2" slices
  • 2 summer squash cut diagonally into 1/1 inch slices
  • 3 assorted sweet peppers, seeds removed cut into 4 pieces
  • 4 T veg oil
  • 1 package cooked chicken and apple sausages
  • 1/2 pound whole wheat spaghetti

Preparation

Step 1

Whisk together sauce ingredients, cook veggies and sausage on med-high grill and brush with sauce. Toss veggies, pasta and remaining sauce.
