Ingredients
- 2 medium sweet potatoes
- 2 oz. cream cheese, softened
- 2 Tbsp. sour cream
- 1 Tbsp. butter
- 1/4 Tsp. salt
- 2 Tbsp. brown sugar
- 1/2 Tsp. ground cinnamon
Preparation
Step 1
Scrub and peirce potatoes. Place in microwave for 12-14 minutes. Cut a thin slice off of the top and discard. Scoop out pulp, leaving a thin shell. In large bowl, mash the pulp. Add cream cheese, sour cream, butter and salt. Mix well. Spoon into shells.
Place on baking sheet. Sprinkle with brown sugar and cinnamon. Bake uncovered for 12-15 minutes at 425 degrees.
