Ingredients
- 2 " ginger, grated
- 2 c. chopped carrots
- 1 lg onion, chopped
- 1 red pepper, chopped
- 6-8 c. "Better than Bouillon"
- 1 tsp curry
- salt & pepper to taste
- garnish: parsley or chives

Preparation
Step 1
Mince or saute ginger, carrots, onion, and pepper. Add 6-8cups ''Better Than Bouillon'' simmer til soft, whirl with immersion blender, stir in curry, season with salt and pepper, garnish with parsley or snipped chives.
