Salmon Croquettes

Ingredients

  • 1 15oz can salmon
  • 1 egg
  • 1/4 cup flour
  • 1/4 cup potato flakes
  • 1 small onion grated
  • black pepper
  • 1 heaping tsp baking powder
  • oil for frying
  • fresh dill and lemon wedges for garnish

Preparation

Step 1

Drain salmon, reserve 1/4 cup liquid. Remove skin and bones. Place salmon in mixing bowl, breaking into smaller pieces. Add egg mixing thoroughly.

Stir in flour. Blend in potato flakes, onion, and black pepper.

Combine baking powder and reserved liquid. Stir into salmon mix. Form mix into 24 croquettes.

Drop into hot oil and fry without crowding for 3 to 5 min. Drain on papern towels.
