Ingredients
- 1 TBSP sugar
- 1 TBSP olive oil
- 1/2 tsp salt
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp freshly ground black pepper
- 4 lbs plum tomatoes, halved lengthwise (about 16 medium)
Preparation
Step 1
Preheat oven to 200.
Combine all ingredients in a large bowl, tossing gently to coat tomatoes. Arrange tomatoes, cut sides up, on a baking sheet coated with cooking spray.
Roast for 7 1/2 hrs.
Serve as a side dish or puree with a splash of olive oil and toss with pasta.
