Mushroom and Pesto Pizza

Ingredients

  • 1 pizza crust
  • 2 oz dried porcini mushrooms
  • 3/4 cup fresh basil
  • 1/3 cup pine nuts
  • 1 1/2 oz Parmesan cheese, thinly sliced
  • 7 tbs olive oil
  • 2 onion, thinly sliced
  • 8 oz cremini mushrooms, slice
  • Salt and pepper

Preparation

Step 1

1. Soak the dried mushrooms in hot water for 20 min. Place the basil, pine nuts, Parmesan cheese and 5 tbs of oil in a blender or food processor and process to make a smooth paste. Set aside.

2. Fry the onions in the remaining oil for 3-4 min until beginning to color. Add the cremini mushrooms and fry for 2 minutes. Stir in the drained dry mushrooms and season lightly.

3. Preheat oven to 425 degrees. Lightly grease a large baking sheet. Put the pizza dough on baking sheet.

4. Spread the pesto mix to within 1/2 inch of the edges. Spread the mushroom mix on top.

5. Bake the pizza for 35-40 min until risen and golden.
