Ingredients
- 2 cups all-purpose flour.
- 1 cup vanilla without raisins.
- 2/3 cup sugar.
- 3 teaspoons baking powder.
- 1 teaspoon salt.
- 1/2 teaspoon ground cinnamon.
- 1/4 teaspoon ground nutmeg.
- 2 eggs.
- 2/3 cup unsweetened apple juice.
- 1/4 cup canola oil.
- 1 1/2 cups grated peeled apples
Preparation
Step 1
In a large bowl, combine the first seven ingredients. In another bowl, whisk the eggs apple juice and oil. Stir into dry ingredients just until moistened. Fold in apples.
Fill greased or paper lined muffin tins 3/4 full. Bake at 400° for 18 to 20 minutes or until a toothpick inserted near the center comes out clean. Cool for five minutes before removing from the pan to Iraq. Serve warm.
