Roasted Asparagus with Gruyere

Ingredients

  • 2 lb asparagus spears
  • 1 small onion, cut into thin wedges
  • 1 small red or yellow pepper, cut into thin strips
  • 1 T olive oil
  • 1/4 cup shredded gruyere or swiss cheese

Preparation

Step 1

Preheat oven to 400.

Snap asparagus. Wash. Place veggies in jelly roll pan.

Drizzle with oil, toss to coat.

Spread in single layer. Sprinkle with 1/4 t salt and 1/4 t pepper.

Roast uncovered for 20 min.

Put on platter. Sprinkle with cheese.
