Potato Pancakes

Ingredients

  • Optional:
  • 2 large eggs, beaten well
  • 2 T. milk
  • 2 T. flour
  • 1/2 tsp. baking powder
  • 1 1/4 tsp. onion salt
  • 1/8 tsp pepper
  • 1 lb (2 large) raw potatoes, peeled
  • strips of bacon, cut into squares
  • Sour cream
  • applesauce

Preparation

Step 1

In medium bowl combine eggs, milk, flour, baking powder, onion salt and pepper. With hand beater, beat for about 1 minute until smooth. Shred potatoes on grater into liquid, this will prevent potatoes from browning.

To fry, stir well each time, pick up potato with a large spoon and pour into about 1/16 inch very hot cooking oil. Flatten each one and fry over medium heat until golden brown and crisp, for about 5 minutes. Flip and fry other side for several minutes.

Serve with bacon & sour cream or applesauce.
