Butternut Squash Soup

Ingredients

  • 1 medium butternut squash
  • 3 tart green apples,peeled,chopped
  • 1 medium onion,chopped
  • 1 tsp salt
  • 1/3 tsp pepper
  • 30 oz chicken broth
  • 20 oz water
  • 1/4 cup heavy cream
  • chopped fresh parsley

Preparation

Step 1

Peel squash and seed.Cut into chunks.Combine
all ingredients,except cream.Bring to a boil,simmer uncovered for 45 min.Puree soup in blender.Return to sauce pan,bring to boiling point.Reduce heat.Before serving,add cream and sprinkle with parsley.
I let everyone add their own cream.
