Sausage Penne Family Supper

Ingredients

  • 1 lb. mild Italian sausage
  • 1 cup thinly sliced red onion
  • 1 cup thinly sliced red pepper
  • 8 oz. uncooked penne pasta
  • 2 cups beef broth
  • 1 cup evaporated milk
  • 1 tsp. minced garlic
  • 2 tsp. Italian seasoning
  • 3/4 cup grated cheddar cheese
  • 1/4 cup grated parmesan cheese, optional

Preparation

Step 1

Remove casings from sausage and crumble into a large skillet; add onion and pepper and cook until sausage is brown and vegetables wilt.

Add pasta and broth, stirring well, and bring to a boil. Reduce heat and simmer 15 minutes or until pasta is tender. Add milk, garlic and Italian seasoning and cook until thoroughly heated; do not boil.

Remove from heat and add cheddar cheese; stir until cheese melts.
