Lemon Lime Spring Cookies

You can add a drop or two of yellow or green food coloring to glaze to make them more springy.

Ingredients

  • 1 1/2 c sugar
  • 1 c shortening
  • 2 eggs, beaten
  • 8 oz sour cream
  • 1 T grated lemon rind
  • 1 T grated lime rind
  • 3 T lemon juice
  • 4 c all purpose flour, plus 2 T
  • 1 T baking powder
  • 1 t baking soda
  • 1/4 t salt
  • Glaze
  • 16 oz pkg powdered sugar, sifted
  • 2 T grated lemon or lime rind
  • 5 T lemon juice
  • 1 t vanilla

Preparation

Step 1

Combine first 4 ingredients in a large bowl; beat until smooth and creamy.

Add rinds and juice; beat well.

Combine flour, baking powder, soda, and salt; gradually add to creamed mixture, beating well.

Drop dough by spoonfuls onto greased cookie sheets and bake at 350 for 10-12 min or until edges just begin to brown. Cool on wire racks.

Glaze
Combine all ingredients and beat until smooth. Drizzle over cooled cookies.
