Broccoli with Parmesan Bread Crumbs

Ingredients

  • 1 slice day old multigrain bread
  • 1 tbs butter
  • Salt
  • 1 bunch of broccoli
  • 2 tbs olive oil
  • 2 cloves garlic, minced
  • 1/4 c. Parmesan cheese

Preparation

Step 1

Tear bread into pieces and place in food processor. Pulse until crumbs are size of small pebbles. Melt butter in a skillet over medium high heat. Add bread crumbs and toast about 3 minutes, shaking pan until golden brown. Place in a bowl to cool.

Blanch the broccoli in a pot of boiling salted water for 2-3 minutes. Drain and place in ice water to stop the cooking. When cool remove from water and pat dry with paper towel.

Heat oil in large skillet, add garlic and cook 1 minute. Add broccoli stir to coat and cook 3 minutes. Add half the bread crumbs and half the Parmesan. Stir to combine and cook for another minute. Remove from heat. Just before serving add the remaining bread crumbs and Parmesan.
