Raspberry Muffins

Ingredients

  • Topping:
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cup packed brown sugar
  • 1/2 cup oil
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 2 cups raspberries ( may substitute rhubarb)
  • 1/2 cup brown sugar
  • 1 tblsp melted butter
  • 1/2 tsp cinnamon

Preparation

Step 1

Combine dry ingrdients.
Blend sugar and oil
Wisk in egg and buttermilk and vanilla.
Stir into dry ingredients with raspberries until flour is blended.
Sprinkle topping on.

Bake at 350 for 20 to 25 minutes.
