Potato and Leek Soup

Ingredients

  • 4 cups Leeks sliced
  • 4 cups Potatoes diced
  • 6 to 7 cups water (stock preferable)
  • 1 1/2 tsp Salt (or to taste)
  • 1/2 cup or more sour cream, heavy cream or creme fraiche.

Preparation

Step 1

Simmering the soup. Bring the leeks, potatoes, and water to a boil in the saucepan. Salt lightly, cover partially and simmer 20 to 30 minutues, or until the vegetables are tender. Taste and correct seasoning. Using immersion blender, puree to desired texture.
