Ingredients
- salt and pepper
- 1 cup brown rice
- 1/4 cup soy sauce
- 1/4 cup lemon juice (1-2 lemons)
- 2 tbsp rice vinegar
- 1 tbsp olive oil
- 1 lb medium shrimp
- 1/2 lb snow peas
- 1 avocado, pitted and cut into chunks
Preparation
Step 1
In a large pot, bring 2 cups water to a boil. Add rice, cover, reduce to low heat and cook until rice is tender, 45-40 minutes.
In a small bowl, stir together soy sauce, lemon juice, vinegar and sugar until dissolved.
Heat oil in large skillet over medium. Add shrimp and snow peas. Season with salt and pepper. Cook until shrimp are opaque, 2-3 minutes.
Divide rice among 4 bowls. top with shrimp mixture and avocado. Serve sauce on the side.
