Ingredients
- 1/3 cup light mayo
- 1 tbsp fresh lime juice
- 1/4 tsp hot sauce
- salt and pepper
- 1/2 cup flour
- 2 eggs, beaten
- 2 medium green tomatoes, cut into 4 slices
- 1/2 cup vegetable oil
Preparation
Step 1
In a small bowl, stir together mayo, lemon juice and hot sauce. Season with salt and pepper, set aside.
Place flour, eggs, and cornmeal each in separate bowls and season each with salt.
Line a large rimmed baking sheet with paper towels. Dip tomatoes in flour, then eggs, then cornmeal. Heat oil over medium in large saucepan. In 2 batches, fry tomatoes until golden, 3 minutes per side.
Transfer to baking sheet and sprinkle with salt. Serve with sauce.
