Fully Loaded Baked Potato Salad

Preheat oven to 350 degrees

Ingredients

  • 1-5 lb bag med russet potatoes
  • 1 c sour cream
  • 1/2 c mayonnaise
  • 1 pkg bacon, cooked and crumbled
  • 1 small onion, chopped
  • chives to taste
  • 1 1/2 c shredded cheddar cheese
  • salt and pepper to taste

Preparation

Step 1

Wash potatoes and poke holes in them with fork. Bake at for about an hour or until fork tender. cool and cut the potatoes into bite sized chunks. Mix the mayo and sour cream together in bowl. Add to potatoes. then add the onions, chives, and cheese. Salt and pepper to taste. Mix well. Top with remaining cheese, bacon and chives, and serve.
