Ingredients
- Cake:
- 2 C brown sugar
- 3/4 C shortening
- 16 oz can pumpkin
- 4 eggs
- 1/4 C water
- 2 C flour
- 1 1/3 C oatmeal
- 1/2 C nuts
- 2 t baking powder (make sure it's fresh, or use 3)
- 1 T pumpkin pie spice
- 1 1/2 t baking soad
- 3/4 t salt
- Glaze:
- 1 C powdered sugar
- 4 t orange juice
- 3/4 t grated orange peel
Preparation
Step 1
Beat sugar and shortening until fluffy. Mix in pumpkin, egg and water. Combine dry ingredients and add. Spread into greased tube or bundt pan. Bake 60-70 min at 350. Cool and top with glaze.
Glaze: mix all together; add more sugar or juice as needed.
