Ingredients
- 800 g Potatoes, chopped
- 2 Bacon Rashers, chopped
- 1 Clove Garlic, crushed
- 4 Medium Brussel Sprouts, hard core removed, shredded
- 1 Egg, beaten
- 1/3 cup Dried Breadcrumbs
Preparation
Step 1
*Boil potatoes until slightly soft. Remove from heat and cool. Transfer to a large bowl and mash. Season with salt.
*Heat a medium fryng pan over moderate heat. Add bacon and garlic, cook and stir for 2-3 minutes or until bacon is crisp. Add bacon mixture to potato mash.
*Add sprouts, egg and breadcrumbs. Mix to combine.
*Using damp hands, shape into patties. Place on plate and chill for 10 minutes.
*Fry patties in 2cm of vegetable oil, for 2-3 minutes on each side.
