Pickled Eggs (Red Beet Eggs)

Another Pennsylvania Dutch recipe handed down.

Ingredients

  • 18 Hard Boiled Eggs
  • 3/4 Cup Apple Cider Vinegar
  • 1/4 Cup Water
  • 1 1/2 Cups Sugar
  • 1/2 Small Onion
  • Red Beet Juice

Preparation

Step 1

Mix all ingredients except for the hard boiled eggs together in a saucepan and bring to a boil. Simmer for 5 minutes. Cool. Pour over hard boiled eggs and place in an airtight container or large jar along with a jar of red beets. Completely chill before serving. The eggs look pretty served on top of a lettuce salad.
