Almond and Olive Crusted Salmon

Ingredients

  • 2 T. evoo
  • 1/2 c sliced almonds
  • 1/2 c panko breadcrumbs
  • 1 t. fresh thyme leaves, chopped
  • 1 t. lemon rind, finely chopped
  • 2 T. green or black olive tapenade
  • 4 , 5oz. Salmon fillets

Preparation

Step 1

Heat evoo in small saute pan and saute almonds until lightly toasted. Remove from heat. Stir in breadcrumbs, thyme and olives.

Press 1/4 of crumb mixture on top of each fillet. Place on greased baking sheet or one lined with parchment.

Bake at 400F for 12-15 mins.
