Ingredients
- 1 pound spaghetti noodles
- 1/2 cup peanut butter
- 2 tablespoons white-wine vinegar
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon grated fresh ginger
- 1 tablespoon sesame oil
- 1/4 teaspoon cayenne pepper
- 1 small clove garlic, minced
- 3/4 cup very hot chicken broth
- 1 medium carrot, shredded
- 1 tablespoon toasted sesame seeds
Preparation
Step 1
Combine peanut butter, vinegar, soy sauce, brown sugar, ginger, sesame oil, cayenne, garlic and chicken broth in a blender. Process until well mixed, about 2 minutes.
Place noodles in a serving bowl. Top with carrot and sesame seeds.
Bring 4 quarts water to a boil in a large pot over high heat; add noodles. Cook according to package directions; drain. Return noodles to pot.
Pour sauce over noodles in pot. Stir until noodles are coated and sauce is evenly distributed.
