Spinach, Orange and Red Onion Salad

Ingredients

  • 1 bag of baby spinach, washed and pat dry
  • 1 Tbsp Extra Virgin Olive Oil
  • 1 tsp fresh lemon juice
  • 2 large navel oranges, peeled and with pith removed cut into segments
  • 8-12 very thin slices of red onions separated into rings
  • Fresh ground pepper

Preparation

Step 1

Drizzle the spinach with half of the olive oil and the lemon juice, toss to coat and divide among 4 salad plates.

Arrange the orange and onions on top dividing evenly.

Drizzle with remaining oil and season with pepper.
