Ingredients
- 1 cup fresh or thawed frozen corn
- 3 plum tomatoes finely chopped
- 2 green onions minced
- 2 Tbsp coarsely chopped cilantro
- 2 1/2 fresh lime juice
- salt and fresh ground pepper
Preparation
Step 1
Cook corn in boiling water (3 min. for fresh or 1 min. for frozen) Drain, cool and pat dry.
In a small bowl toss corn with tomatoes, green onions, cilantro and lime juice. Season with salt and pepper. Let stand at least one hour before serving.
