Shrimp Cakes

Ingredients

  • 1 bag defrosted Raw shrimp
  • 6 scallions
  • handful cilantro, finely chopped
  • zest and juice one lemon
  • 1 tablespoon Dijon mustard
  • 2 beaten eggs
  • salt and pepper
  • 1 teaspoon hot sauce

Preparation

Step 1

Place the shrimp in a blender and blend to pulp. Remove from blender and place in large bowl.

Add remaining ingredients to the bowl and mix.

Fry in small batches in melted oil until golden and cooked through.
