Ingredients
- 1 large oniion, chopped
- 2 tsp olive oil
- 1 tsp minced fesh ginger
- 6 large carrots, sliced
- 2/3 C orange juice
- 1 T butter
- 2 tsp honey
- 1 tsp grated orange peel
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/4 C chopped walnuts (or cashews)
- 1 tsp dried parsely
- 1/4 tsp crushed red pepper flakes (if desired)
Preparation
Step 1
- Saute onion (and crushed red pepper if using) in oil until tender; add ginger and cook 1 min.; stir in carrots, OJ, butter, honey, orange peel, salt, pepper
- Bring to boil; reduce heat; simmer 12-15 min. until carrots tender
- Stir in nuts and sprinkle with parsely
