Nutty Ginger Carrots

Ingredients

  • 1 large oniion, chopped
  • 2 tsp olive oil
  • 1 tsp minced fesh ginger
  • 6 large carrots, sliced
  • 2/3 C orange juice
  • 1 T butter
  • 2 tsp honey
  • 1 tsp grated orange peel
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/4 C chopped walnuts (or cashews)
  • 1 tsp dried parsely
  • 1/4 tsp crushed red pepper flakes (if desired)

Preparation

Step 1

- Saute onion (and crushed red pepper if using) in oil until tender; add ginger and cook 1 min.; stir in carrots, OJ, butter, honey, orange peel, salt, pepper
- Bring to boil; reduce heat; simmer 12-15 min. until carrots tender
- Stir in nuts and sprinkle with parsely
