Scrambled Eggs w. Wild Mushrooms

Ingredients

  • 8 oz mixed wild mushrooms
  • 4 tbsp butter
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh chives
  • salt & pepper
  • 8 eggs

Preparation

Step 1

Clean mushrooms, Melt 2 tbsp of butter in frying pan over high heat. Add mushrooms and saute, stirring often, til tender and all liquid evaporated, 5-7 min. Stir in the parsley and chives and season with salt & pepper.
Whisk eggs in bowl w. salt & pepper. Melt the remaining 2 tbsp buter in a heavy saucepan over low heat. Add the eggs and cook, stirring constantly with a wooden spoon, til they begin to thicken. This should take at least 5 min. Continue stirring, lifting pan from heat as necessary so the eggs thicken smoothly and form quite small curds. When cooked to your taste, stir in mushrooms. Taste, adjust seasoning and serve
