Squash Medley

Ingredients

  • 1 tbs butter
  • 1 tbs oil
  • 1 med onion, sliced
  • 1 lg zucchini, sliced
  • 2 med yellow squash, sliced
  • 1 med green pepper cut in strips
  • 3 med tomatoes, chopped
  • 1 tsp dried basil
  • 1 tsp salt
  • Pinch of pepper
  • 1 c. grated parmesan cheese

Preparation

Step 1

Heat butter in skillet on medium high for 2 minutes. Add onion; stir fry 1 minute. Stir in zucchini, squash and peppers; cook 2-3 minutes until vegetables are crisp tender. Add tomatoes, basil, salt and pepper stirring well to combine. Sprinkle with cheese and toss to melt cheese. Serve warm.
