Lemon Pepper Polenta

Serve with Chicken Marengo.

Ingredients

  • 2 cups milk
  • 1 cup water
  • 1/2 cup yellow cornmeal
  • 2 tsp. minced lemon zest
  • 1/2 tsp. kosher salt
  • 1/4 tsp pepper
  • 3 oz. cream cheese, cubed.

Preparation

Step 1


BOIL milk, water in a large saucepan. Whisk in cornmeal, zest, salt, and pepper, then reduce heat to a simmer.

COOK polenta until thickened, 5 minutes, whisking occasionally.

STIR in cream cheese until melted.
SPRINKLE top with additional lemon zest.

SERVE with Chicken Marengo.
