Lemon Cupcakes

Ingredients

  • Icing:
  • Duncan Hines Lemon Supreme cake mix
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 1/3 cup fresh Meyer lemon juice
  • 1 package instant vanilla pudding
  • 1/2 cup shortening
  • 1/2 cup butter (one stick)
  • 1 i oz. bar cream cheese (room temperature)
  • 2 lbs. powdered sugar
  • 1 tablespoons vanilla
  • 1/2 teaspoon salt

Preparation

Step 1

Mix together all cake ingredients until smooth.

Fill lined cupcakes tins two-thirds full.

Bake at 350 for about 20 minutes.

Let cool completely before icing.

Icing:
Cream together shortening, butter and cream cheese then add in powdered sugar slowly. Add vanilla and salt.

Garnish cupcakes with crushed lemon drop candy and fresh mint.
