Banana Macadamia Nut Pancakes

Ingredients

  • 2 c. flour
  • 1/2 c. brown sugar
  • 1 Tbs. sugar
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 c. buttermilk
  • 1/2 c. melted butter
  • 1 tsp. vanilla
  • 1 ripe banana
  • 1/4 c. salted macadamia nuts, chopped

Preparation

Step 1

Combine flour, sugars, baking soda, baking powder, and salt. In a separate bowl, mix the buttermilk, melted butter, and vanilla. Stir into the flour mixture. Let stand at least 20 minutes. (Can be refrigerated for up to 3 days.)

Stir in chopped banana and the nuts just before pouring on the griddle.
