Roasted Garlic Mojo

Ingredients

  • 4 heads of garlic, unpeeled
  • 2 cups olive oil
  • 1/4 cup lime juice
  • 1 tsp salt

Preparation

Step 1

Roast garlic heads in a skillet until soft and browned. Peel garlic cloves and process with olive oil, lime juice and salt. Store in frig 4 months!

Use to sauté proteins, mix in with roasted potatoes or veggies, stir into mashed potatoes.
