Lemon Shrimp Kabobs

LEMON SHRIMP KABOBS
Executive chef Billy Della Ventura of Boston College Club in Boston says these colorful, delicious kabobs are the ideal tailgating food because everything can be prepared in advance and grilled on one stick.

Ingredients
- 2 pounds large shrimp, peeled and deveined, leaving tail intact
- 2 red bell peppers, cut in 1-inch cubes
- 1 purple onion, cut in 1-inch cubes
- 2 zucchinis cut in 1-inch rounds or cubes
- 4 cloves garlic, minced
- 2 cups parsley, chopped
- 1 lemon, juice and zest
- 3 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- salt and pepper, to taste
Preparation
Step 1
Combine all ingredients in a large plastic bag and marinate for 20 minutes. Alternately thread shrimp and vegetables on 6-8 skewers. Grill skewers covered for 6-8 minutes on medium-high heat, turning frequently. Serve immediately.
Yield: 6-8 servings
