Broccoli Cheese Casserole

Ingredients

  • 2 10oz packages copped broccoli
  • 1 can cream of celery soup
  • 1 cup mayo
  • 2 eggs
  • 2 TBS chopped onion
  • 1 cup grated cheese
  • 1 cup crushed cheese crackers
  • 2 TBS butter, melted
  • salt and pepper to taste

Preparation

Step 1

Cook broccoli for 10 mins and drain well. Mix all ingredients except crackers and butter. Salt and pepper to taste. Place mixture in a 1 1/2 quart greased casserole dish. Place crushed crackers on top. Drizzle butter over crackers. Bake at 400 degrees for 30 mins. Casserole may be stored overnight before cooking.
