Baked Cherry Nut Baby Brie

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 pkg (13.2 oz) baby brie
  • 1 egg, beaten
  • 2/3 cup cherry preserves
  • 2 Tbsp finely chopped crystallized ginger
  • 1/4 C coarsely chopped pecans

Preparation

Step 1

Heat oven to 425. Line cookie sheet with parchment paper.
On lightly floured surface, roll pastry into a 10 in square.
Cut 9 in circle from pastry.
Place on lined cookie sheet.
Place baby brie in center. Brush egg along 1 in outside strip of pastry.
Bring pastry up over cheese, pleating every inch, press firmly.
Brush top and sides with egg.

Bake 15-20 minutes until pastry is golden brown and cheese is soft.
Cool 50 minutes.
In small bowl, combine preserves, crystallized ginger and pecans. Spoon onto center of baked cheese. Serve with crackers or mini toasts. Refridgerate leftovers.
