Ingredients
- 4 chicken breasts
- 1 onion finely chopped
- 1 tab voo
- 1/2 cup ricotta
- 1 tsp finely chopped basil
- 1 tab butter
- 1 lb spinach coarsly chopped
- 1/2 cup parm cheese
- Pepper
Preparation
Step 1
Cook onion in butter and oil, add spinach cook. Let cool and stir in cheeses, basil, pepper
Fill chicken breasts. Bake 375 degrees. 25 -40 mins Slice 1/2" wide
Sauce
1 cup plain yogurt,1 tab red vinegar, 1/4 tsp salt, 1 ripe tomato seeded and chopped, basil, pepper. Reserve 1 tsp of basil and tomato for garnish.
