Ingredients

- RED CABBAGE
- 8 cups thinly sliced red cabbage (about 1/2 large head)
- 1/4 cup chopped Italian parsley
- 2 tbsp drained capers
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 2 tbsp water
- 1 tbsp minced garlic
- GREEN CABBAGE
- 8 cups thinly sliced green cabbage (about 1/2 large head)
- 2/3 cup thinly sliced green onions
- 1/2 cup finely chopped carrot
- 1/2 cup chopped green bell pepper
- 1/2 cup low-fat mayonnaise
- 2 Tbsp apple cider vinegar
- 1 tsp celery seeds
Preparation
Step 1
RED CABBAGE
1. Combine red cabbage, parsley and capers in large bowl.
2. Wisk oil, vinegar, 2 Tbsp water and garlic in small bowl to blend.
3. Add to cabbage mixture and toss to blend. Season to taste with salt and pepper. (Can be prepared up to 3 hours ahead. Cover and refrigerate).
GREEN CABBAGE
Combine cabbage, green onions, carrot and bell pepper in large bowl.
Whisk mayonnaise, apple cider vinegar and celery seeds in small bowl to blend. Add dressing to cabbage mixture and toss to coat. Season to taste with salt and pepper. (Can be prepared 3 hours ahead. Cover and refrigerate).
