Red Pepper & Tomato Soup

Ingredients

  • 1 T olive oil
  • 1 C chopped onion
  • 2 cloves chopped garlic
  • 2 red peppers, chopped
  • 2 C canned plum tomatoes
  • 1 potato, peeled & chopped
  • 2 C chicken broth
  • 2 C water

Preparation

Step 1

In large skillet, heat oil. Add onion & garlic; suate 3 min. til soft. Add peppers & saute 3 min. Add tomatoes, potato, broth & water. Simmer, partially covered til softened, @ 25 min. Remove from heat & cool
Wtih slotted spoon, transfer vegetables to food processor. Puree til smooth; stir back into pot & simmer 5 min.

Serving 3/4 C = 66 cal
