Pasta with Fresh Tomato and Basil

Ingredients

  • 16 ounces spaghetti, cooked
  • 1 pound whole Golden mushrooms, quartered
  • 2 tablespoons olive oil
  • 12 ripe plum tomatoes, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons chopped fresh basil
  • 3 tablespoons lime juice
  • ½ teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup shredded Parmesan cheese

Preparation

Step 1

Prepare pasta according to package directions.

Sauté mushrooms in a large skillet until liquid is absorbed. Add all other ingredients except cheese and sauté over medium heat, stirring constantly, 1 minute or until thoroughly heated. Spoon over hot cooked pasta; sprinkle with Parmesan cheese.
