Eggs Fried With Tomatoes & Goat Cheese

Ingredients

  • 2 T. oil
  • 1/2 onion, shredded
  • 1/2 red pepper, shredded
  • 1 garlic clove, shredded
  • 1/2 t. cinnamon
  • 1/2 t. cumin
  • 1 T. fresh coriander, shredded
  • Pinch of salt and pepper
  • 1 t. tomato paste
  • 16 cherry tomatoes
  • few slices of goat cheese
  • 4 eggs

Preparation

Step 1

1. Heat frying pan with oil and add onions, red pepper, garlic, spices and tomato paste. Hat it for few minutes and add cut tomatoes.Cover with lid and cook for about 15 minutes.

2. Add a few slices of goat cheese, break in eggs, cover with lide and fry for about 3-4 minutes, so egg white is cut.
