Zucchini Bread

Ingredients

  • 3 eggs
  • 2 C sugar
  • 1/2 C vegetable oil
  • 1 t vanilla
  • 2 C zucchini, grated
  • 1 C nuts
  • 3 C flour
  • 1 t salt
  • 1 t baking soda
  • 1/2 t baking powder
  • 1 T cinnamon

Preparation

Step 1

In a bowl beat eggs until light and fluffy. Add sugar and beat well. Mix in oil, vanilla and zucchini. Sift together dry ingredients and add to bowl, mix well. Stir in nuts. Bake in 2 medium loaf pans (60 minutes) or 4 smaller individual loafs pans (45 minutes) that have been sprayed with cooking spray until toothpick comes out clean.
