Sweet Potato Surprise

Ingredients

  • 2 large cans sweet potatoes
  • 1 1/4 cups brown sugar
  • 1 1/2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 teaspoon orange peel
  • 1 16-ounce can apricot halves
  • 2 tablespoons butter
  • 1/2 cup pecan halves

Preparation

Step 1

Preheat oven to 375 degrees. Cut up sweet potatoes; place in greased casserole dish. In a pan, combine sugar, cornstarch, salt, cinnamon, and orange peel. Drain apricots, reserving liquid. Add 1 cup of reserved liquid into starch mixture and cook, stirring, for 2 minutes. Add apricots, butter, and pecans. Pour potatoes and bake for 25 minutes.
