Ingredients
- 10 Eggs
- 1 Tbsp Cream or Milk
- 2 tsp minced fresh oregano and more for garnish
- Kosher salt and ground pepper
- 1 Tbsp extra virgin olive oil
- 2 medium tomatoes diced
- 1/2 cup or 2.5 oz Feta Cheese
- 1 1/2 cup baby spinach
Preparation
Step 1
Heat the oven to 425 degrees. In a bowl whisk together the eggs cream and 2 teaspoon oregano with a pinch of salt and pepper
Warm the olive oil in a 10 inch pan over medium low heat. Add the Egg mixture can cook stirring gently until the eggs begin to set but do not begin to scramble. Gently stir in the tomatoes, Feta and the spinach. Cook the eggs undisturbed for 2-3 minutes transfer to oven until firm 5 minutes.
