Ingredients
- 2 limes
- 1/2 cup tequila
- 1 1/2 TBSP olive oil
- 1 tsp kosher salt
- 2-3 garlic cloves
- 1/2 jalapeno, seeded and sliced
- Freshly chopped cilantro, to taste
- 6 boneless, skinless chicken breasts
- 1 cup grated Monterey Jack
Preparation
Step 1
Squeeze the juice of both limes into a food processor or blender. Add the tequila, oil, salt, garlic, jalapenos and cilantro. Blend the mixture til fully combined. Add the chicken to a large plastic bag and pour in the lime-tequila mixture. Seal the bag and marinate in the fridge for several hours or overnight.
Remove the chicken from the bag and grill over medium-high heat. Flipping once, grill til cooked through, 4 to 5 minutes per side.
Melt the cheese over the top of the chicken.
