Potato Waffle

Ingredients

  • 4 tablespoons canola oil
  • 4 cups cold leftover mashed potatoes
  • 3 tablespoons each chopped green onions and red bell peppers
  • 1/2 cup grated Cheddar or Parmesan cheese
  • 1 egg, lightly beaten

Preparation

Step 1

Heat waffle iron and coat with some of the oil. Combine potatoes and remaining ingredients; mix well. Shape potatoes into patties and coat with flour. Place patties onto a waffle iron and cook until golden brown. Re-oil waffle iron if needed for additional batches.
