Jamie's ravioli

Ingredients

  • for pasta:
  • 12 egg yolks beaten
  • 400 gr 00 flour
  • 75 gr semolina
  • 2 tbsp olive oil
  • bit of cold water
  • for filling:
  • 400 gr ea veal and pork Ground
  • 1 onion
  • 2 stick celery
  • 2 garlic cloves
  • 2 carrots
  • 2 cans chopped stewed tomatoes
  • For sauce:
  • Basil, garlic and tomatoe sauce

Preparation

Step 1

toss egg yolks with flour, then add olive oil, knead, add water, dough should knead into soft, elastic state. knead well on floured board but keep soft, elastic state. wrap and place in fridge to relax 30 min.

filling:
cook meat to light gold (liquid cooked away) Chop all vegies fine. Add vegies to meat, season with salt and pepper, cook til sizzle. add a slosh of red wine and cook away liquid. Add tomatoes and cook away liquid.
Run pasta thru machine, make thin- flutters if you blow at it, and make raviolis. cook about 3 min in boiling salted water.
Sauce: In hot pan - drizzle olive oil and sear chopped garlic and basil, then pour in tomatoe puree and let flavors cook together.
